Day 3 of Oregon Sparkling!
Have you heard of Cho Wines yet? Dave Cho is taking Oregon Wine Country by storm with an inaugural release of a Pinot Noir, Pinot Blanc, Rose of Pinot Noir, Blanc de Noirs, and a couple of Pet-Nats.
🥂 Fact
Pet-Nat is often referred to as a Sparkling using the Ancestral Method. The difference between the Ancestral Method and other methods of producing Sparkling (Method Traditional or Method Champenoise) is with Ancestral, the yeast stays in the bottle when consumed.
🥂 Winery
There is a spirit in Oregon Wine Country, and it shines brightly with winemaker Dave Cho. He is the first Korean-American winemaker in Oregon. He spent time at Argyle and Stoller before creating his label of Pinot and, of course, Sparkling! Wine is always about food pairings, and Dave loves to pair Sparkling with southeast Asian-inspired foods!
