Tasting Notes
Let’s face it, winter is here, and there is nothing better than to sit down with some good ole comfort food and a glass of wine. To me, mashed potatoes top the comfort foods list, add in some cheese, and oh my! I called this dish “Twice baked layered potatoes cheese yumminess.” Yes, I just made up the name. The basic premise is first to make mashed potatoes. Once done, put a layer of white fluffy potatoes in a casserole dish, add a layer of cheese, another layer of potatoes, and top it off with MORE cheese. Put in the oven at 400 until the top layer of cheese has formed a nice crusty texture. Take it out, pour a glass, binge watch “The Queen’s Gambit,” and let the couch suck you deep into its depth for the evening.
