Tasting Notes
Yesterday I decided to open up some Bubbles, sit on my back deck and let the sun slightly kiss my bald head. It was beautiful while it lasted before the rain set in. So today, I decided to freeze a little while sitting outside and sip on some more Bubbles!
Can I say how freakin much I enjoy Corollary’s 2018 X-OMNI Blanc de Blanc? Day two of this bad boy, and I am in bliss! The past couple of days, I have been researching a Champagne house, and it makes me so excited how much Sparkling Oregon will be producing in the next ten years. There is already more out there than we realize, and two things will happen in ten years. The first is the number of producers will increase like crazy. Second, producers dedicated to Sparkling will have a reserve they can start pulling from to create multi-vintage Sparkling. I know one producer already doing this, and it’s crazy good! I imagine an X-OMNI Blanc de Blanc releasing in 2032 with ten different vintages in the bottle will literally blow the remaining hair off my head. Can you imagine?
