Tasting Notes
Today was a hot one, and I needed a little something to cool things off. Corollary’s 2018 X-OMNI Blanc de Blanc is a bottle I will never forget. My excitement when I read this Sparkling was being released was off the charts. If you are unaware of the X-OMNI vineyard, let this be your first introduction. Anything with X-OMNI or X-NOVO on the label, grab immediately. I wasn’t disappointed when I opened my first bottle in April of 2022, and I wasn’t disappointed today.
This is what @paulgwine recently said about this wine.
94 pts: From a top vineyard in this Chardonnay-centric AVA, this exceptional all-Chardonnay bubbly deserves the center ring in the Corollary portfolio. I love the purity, the power and the precision of this wine. Fermented in neutral oak, left on the lees for six months, then re-fermented en tirage for three and a half years, this expressive wine is as close the Champagne as you can find in Oregon. Pay attention to the finish, which lingers and keeps adding nuances and details all the way through.
I also adore how Paul studies a wine over several days.
